San Juan carpentry has posted a series of how-to videos on you-tube that cover pretty much everything from logging and milling to woodworking.  Here's a link to the video of milling a fireplace mantle on their Norwood portable sawmill.

It look like they left one live edge.  Presume that would be on the vertical face of the mantel on the room side.

 Someone earlier asked how to view that video, so I responded ????

We have sawn many pieces for Mantles, leaving natural edge. Cam always remove it later. ALL table tops were sawn with natural edge if at all possible.

 We have made natural edges even on the ends of table slabs. Some people really liked that feature.

I think it would look nice with the natural/live edge.  You are correct on the tables.  They can be very nice with the edge.

 We had to get very creative, once we decided to saw our logs. I looked at what was not commonly available and targeted that market, mostly through local newspaper and word of mouth. My son is nearly out of small pieces for end tables and foot of the bed benches, for his "Elite" clients.  ::) ;D
